Hi Wayne,
To get started please tell us what you have tried in your attempts at achieving consistent reduction.
Providing the following information could save much time in getting to the heart of what you are doing or need to be doing.
1. Do you have venturi burners, or blower motor burners.
2. Do you concern yourself with various stacking sizes of the ware and shelf placements within the stacking.. Top to Bottom etc.......
3. What have you tried regarding balancing air, fuel, and damper, in conjunction with these other possible variables.
Please don't be offended, but do you understand the basic physics of "Reduction?" One cannot just dial up reduction. One must understand and then create or manipulate conditions where reduction will happen.
Let's see who comes forward to dig into this after you provide a picture of something to discuss.
